- 3 apples (approximately 450 grams)
- Juice of half a lemon (2 tablespoons or 30 ml)
- 2 tablespoons sugar (25 grams)
- 2 eggs
- A pinch of salt
- 120 g sugar (1/2 cup)
- Vanilla essence (1 teaspoon or 5 ml)
- 100 ml vegetable oil (1/3 cup + 1 tablespoon)
- 50 ml milk (1/4 cup)
- 180 g all-purpose flour (11/2 cups)
- 10 g baking powder (2 teaspoons)
- Blueberry jam (optional, 1/4 cup or 60 grams for garnish)
- Confectioners’ sugar (for dusting, 1-2 tablespoons)
Preparation
Prepare the apples:
Peel and core 3 apples, then thinly slice them. Mix with the juice of half a lemon and 2 tablespoons of sugar. Cook over high heat for a few minutes until they soften. Set aside.
Prepare the dough:
In a bowl, beat 2 eggs with a pinch of salt, 120 g of sugar and the vanilla essence until the mixture is smooth and fluffy. Gradually add 100 ml vegetable oil and 50 ml milk, stirring until well combined.
Combine the ingredients:
Sift 180 g of wheat flour and 10 g of baking powder. Mix until a smooth dough is formed. Incorporate the prepared apples.
Bake the cake:
Grease and flour a 26 cm pan. Pour the batter into the pan, spreading it evenly. If using, add spoonfuls of blueberry jam on top. Bake in a preheated oven at 180°C for 35 minutes or until a toothpick inserted in the center comes out clean.
Finish and serve:
Allow the cake to cool slightly before dusting with powdered sugar. Cut into wedges and serve warm or at room temperature.
